Flammkuchen / Tarte Flambee
Flammkuchen (in Germany) or tarte flambée (in France) is a crispy, creamy dish from the region of Alsace in northeastern France. Much loved on both sides of the border, this is a great Franco-German alternative to a tomato-based pizza. Crispy bread is smothered in crème fraîche & sour cream, and topped with onions & bacon for a delicious bite.

DOUGH 

METHOD

1.
Preheat the oven to 250°C.

2.
Finely slice the onions and place in a bowl of water. Microwave for 1 minute – this will prevent them burning later.

3.
Whisk the crème fraîche, sour cream, nutmeg and some salt & pepper in a bowl. Put aside.

4.
To make the dough, mix all ingredients with a hand or stand mixture until smooth. Roll out straight onto a piece of baking paper until really thin – almost translucent.

5.
Spread the cream mixture on top, leaving a small gap at the edges. Sprinkle the onion all over. Cut the bacon/lardons and place on top.

6.
Bake! This will need 12-15 minutes, depending on your oven and how crispy you like it.

7.
Sprinkle some chopped chives on top. Enjoy hot!
