Dansk Forår (Danish Spring)

Developed as part of an ‘alcohol free’ section of the menu in a once beloved Copenhagen bar, the Dansk Forår is an interesting fresh take on a garden-inspired drink. With cucumber and celery alongside Seedlip Garden 108, it’s a green juice with extra depth to wow at your party.

WE MADE THIS!

Honestly, we didn’t know what to make of this at first. Most alcohol free drinks tend to swing on the fruity side, so trying a celery-heavy mix was new to us. But this really is a taste of Spring, and the cucumber with a hint of vinegar takes us straight back to Denmark.

Danish bar Kester Thomas, named after “the Willy Wonka of mixology”, featured this drink in the Spring/Summer menu. Cocktails of Copenhagen share the recipe here.

ingredients

TO SERVE

*to make celery cordial, simmer 100ml celery juice, 100ml water and 80g granulated sugar in a pan until the sugar has dissolved. Remove from heat and add 25ml fresh lemon juice. Allow to cool, then strain.
**you can use egg white if preferred 

METHOD

1.
Fill your shaker with all of the ingredients except the ice, and shake hard until a foam forms

2.
Add the ice and shake again to chill

3.
Serve double-strained in a Nick & Nora glass. Garnish with cucumber ribbon and celery salt.
