We don’t know what to say here. We all feel pretty helpless. The people at UNICEF seem to know how to help the kids in Ukraine, Gaza & Armenia (amongst, sadly, many other countries). Donate to UNICEF by clicking through this big box here. We’ll be updating our games this year but not much else, sorry.

Chicken Souvlaki

This classic Greek dish features tender chunks of marinated chicken grilled to perfection!

Souvlaki (from the word ‘souvla’, which means ‘skewer’) has been a beloved staple in Greece for centuries, with roots tracing back to ancient times.

The combination of oregano and lemon gives the chicken a zesty, herbaceous flavour that’s sure to be a hit at your Eurovision party!

WE MADE THIS!

While most recipes say to leave to marinate overnight, this particular recipe seems to work just as well with only 1 hour in the fridge. That’s kind of why we love this so much – it’s a quick and easy way to pack loads of flavour into some chicken!

You can serve these with pitta breads/pockets to stuff, or keep them on the skewers for guests to dunk into a sauce.

We always look to tourist boards for easy to follow recipes – this is no exception. A simple approach to souvlaki with wonderful bold flavours. We’ve made this recipe multiple times!

TIME: 30 mins + AT LEAST 1 HR MARINATING / BEST HOT

ingredients

METHOD

1.
Add all of the ingredients apart from the chicken into a bowl and mix together.

2.
Add the chicken! Stir to coat in the marinade. Cover the bowl and put in the fridge for at least one hour.

3.
If using wooden skewers – soak these in some water to prevent premature burning.

4.
Turn the grill to medium heat.

5.
Thread the chicken cubes onto the skewers, pushing together tightly.

6.
Grill for 8-10 minutes (or until cooked through). Serve with pitta, feta cheese, tzatziki, red onion, tomatoes… whatever else takes yer fancy.

If chicken isn’t your thing, this mushroom souvlaki (vegan) recipe is a great alternative. Still boasting the great oregano and lemon flavours, these mushroom skewers also have some sweetness from maple syrup and extra tanginess from sumac.
