This mouth-watering dish from Georgia is a staple on many restaurant menus. A beautifully flavoured walnut paste is spread onto fried aubergines slices, then rolled up into perfect bite-size pieces.

We made this! But we didn’t take photos, boo. Instead, we hoovered up every roll and loudly proclaimed “this will be amazing at our Eurovision party!” while knowing full well they probably won’t last long enough for a photo then either.

This is the recipe we followed as it had some extra kick from the cayenne pepper. Utterly delicious. You can make the walnut paste a few days before the party to make things easier!
