Rosolje (Estonian beet & herring salad)

Rosolje is a traditional Estonian salad that dates back to the 19th century. It’s typically made with boiled beets, potatoes, carrots, onions, pickles, and herring or other fish, giving it a unique sweet, sour and salty flavour! Rosolje is often served at special occasions and holidays, and is a beloved dish in Estonian cuisine.

We’ve actually made this a couple of times but never at the right time to take a photo. It’s one of those fantastic dishes where you can follow loose guidelines of what should go in without any judgement for skipping the herring (though you really should try it with the herring – it’s a herring salad…)

Any ingredients that need to be boiled should be given plenty of time to cool down/chill in the fridge overnight to ensure the creamy sauce doesn’t split.
